3 Raspberry Recipes

My little backyard raspberry bush produced quite a few berries this year. These are a few of the recipes I used for those delicious gems.

Peanut Butter & Jam Muffins

I made a big pot of raspberry rhubarb “jam” and will definitely be making this recipe all winter.


  • 2 cups quick oats
  • 1/2 cup vanilla protein powder of choice
  • 1/2 cup PB2 (powdered peanut butter)
  • 1/2 tsp baking soda
  • 1 1/2 tsp baking powder
  • 2 large eggs
  • 1 cup unsweetened applesauce
  • 1 cup + 2 tbsp unsweetened almond milk
  • 1 cup raspberries

Cooking Instructions:

  1. Preheat oven to 350 degrees (F). Line a muffin tin with 12 large paper liners and set aside.
  2. Blend oats in blender until resembling flour. I used a mini blender and then use the same one for the raspberries.
  3. Transfer oat flour to a large bowl and add in remaining dry ingredients. Stir to combine.
  4. Add wet ingredients (except raspberries)to dry ingredients, and whisk until combined.
  5. Divide the mixture among the prepared muffin tin.
  6. For the raspberry “jam” you can simply blend to make a puree or put a little extra time in and make a jam.
    • For the easy route add raspberries to a microwave safe bowl and heat for one minute. Transfer to blender and blend until very smooth.
    • For more of a jam consistency, add raspberries to a small pot on medium heat, bring to a simmer and cook for at least 10 minutes until little liquid is left. Add raspberries to blender, blend until smooth, but be careful while opening the blender because the hot raspberries may splatter.
    • If you would like to add more sweetness to the muffins add in 2-4 tbsp of honey.
  1. Using a tablespoon scoop a good amount of the “jam”, and press the spoon down into the middle of a muffin so that the jam goes into the muffins and doesn’t just sit on top. Repeat with remaining muffins.
  2. Bake for 16-18 minutes until the muffins are just browning on top.

Makes 12 muffins.

Raspberry Overnight Oats

  • Another variation of the popular overnight oat recipes


  • 1 cup raspberries
  • 1 cup almond milk
  • 1 tsp vanilla
  • 1 cup quick oats
  • 2 tbsp chia seeds


  1. Blend raspberries, milk, and vanilla together until smooth.  Now you have “raspberry milk.”
  2. Add oats and chia seeds to medium bowl.
  3. Stir raspberry milk into oats.
  4. Place in fridge overnight, and enjoy for the next 3 mornings.

Servings: 3

  • 191 calories
  • 5.8g total fat
  • 30.1g carbohydrates (9.1g fiber, 4.7g sugar)
  • 6g protein

Protein Raspberry Pudding

This makes a great evening snack or dessert.


  • 1 cup raspberries
  • 1 cup almond milk
  • 1/4 cup vanilla protein powder
  • 2 tbsp lemon juice
  • 3 egg yolks


  1. Add the first 4 ingredients to a blender and blend until smooth.
  2. Pour into a small pot and place on medium-low heat. When the mixture begins to bubble, prepare to slowly add in the yolks. We must temper the yolk so they dont instantly cook and turn to chunks. Using a measuring cup scoop out some of the raspberry milk and add about 2 tbsp to the yolks. Stir to combine, then add in another 2 tbsp, stir and then whisk the yolks into the pot. Continue to stir as the milk thickens for another 3-5 mintues, the longer you cook the mixture the thicker the pudding.
  3. Transfer to 2 bowls, allow to cool on the counter for 15 minutes and then let cool in the fridge overnight or until completely cool.
  4. Top with more fresh raspberries, coconut milk, toasted coconut or other delicious garnishing.
