Kale and Sweet Potato Salad

Time to step up your salad game!

This dish includes so many fresh ingredients and herbs and adds a nice crunch with nuts and seeds.

  • 1 small sweet potato (2 cups)
  • 1 tsp chili powder
  • 1 tsp garlic powder
  • 5 cups kale
  • 1 large tomato
  • 1 cup red cabbage
  • 3/4 medium carrots
  • 1/4 cup fresh parsley
  • 1/4 cup sunflower seeds
  • 1/4 cup sliced almonds


  • 2 tbsp dijon mustard
  • 1 tbsp lemon juice
  • 2 tbsp balsamic vinegar
  • 1 tbsp olive oil
  • 1/4 cup water
  • Salt and pepper, if desired

Pro tip :  Substitute the red cabbage for pre-cut coleslaw


  1. Preheat oven to 400F. Peel your sweet potato and chop into medium size cubes. Spread across a baking sheet and sprinkle with chili and garlic powder. Bake for 15 minutes then turn oven to broil and darken sweet potatoes for 5 minutes. Remove from oven and cool on baking sheet until needed in the final step.
  2. Rip leaves of kale from stem into small bite size pieces, wash and pat dry with a towel. Add the kale to a large bowl.
  3. Chop tomato and red cabbage into medium pieces. Add to the bowl of kale.
  4. Peel carrot and then shred using a large grater. Add to bowl.
  5. Chop parsley into very small pieces and add to bowl.
  6. Add in seeds, almonds and sweet potatoes to the bowl and toss everything together.
  7. To make the dressing add mustard, lemon juice, vinegar and oil to a small bowl. Whisk together and then slowly drizzle water into bowl while whisking. Toss with salad and enjoy.
